Goulash

INGREDIENTS
1/2 cup minced onion
1 cup sliced mushrooms
1 lb ground beef
1 can Niblets corn
1 can stewed tomatoes
2 TBSP paprika
Salt & Pepper
2 cups cooked macaroni or other pasta
1 cup shredded cheese

INSTRUCTIONS
~Saute onions & mushrooms in 1 TBSP oil until light brown.  Remove from pan. 
~Brown meat and add seasonings and onion/mushroom mixture.
~Add corn (drained), tomatoes (undrained), and pasta.
~Cook over low heat until heated through and thickened slightly.
~Serve in bowls with cheese on top.

Yield:  6 servings.
Can be made using gluten-free pasta.
