Lentil Stew

1 (16 oz) package dry lentils
1 (15.5 oz) can diced tomatoes, including liquid
2 (14 oz) cans beef broth
3 cups water
2-3 carrots, in 1/4" slices
2 stalks celery, in 1/4" slices
1 small onion, diced fine
2 pounds kielbasa, in 1/4" slices

1. Brown the sausage over medium high heat.  Add onions and cook until nicely caramelized.  Add the carrots and celery and cook until slightly softened.
2. Place all ingredients into a crock pot and cook on low for 5-7 hours; high for 3 hours.


Yield:  12 servings
